Ingredients Needed For This Cream Cheese Coffee Cake

You really don’t need many ingredients to make this insanely good cream cheese coffee cake! You will need the cake, cream cheese filling, and some almonds for the topping. It’s fluffy, filling, and has a perfect crunch on top. 

For the cake:

  • Almond flour
  • Baking powder
  • Pinch of salt
  • Swerve confectioners sugar substitute
  • Butter unsalted
  • Large eggs
  • Vanilla extract
  • Almond extract
  • Heavy whipping cream

For the cream cheese filling:

  • Cream cheese softened
  • Swerve confectioners sugar substitute
  • Vanilla extract
  • Large egg
  • Fresh raspberries: You can also swap the raspberries for blueberries or strawberries if you want a variety. 

For the topping:

  • Sliced almonds

How to make cream cheese coffee cake

There are very few directions needed to bake this yummy keto cream cheese coffee cake. Let’s take a peek at the easy steps, and you will be so glad you did! 

1. Warm up the oven to 325 degrees.

2. Using a medium mixing bowl, combine the almond flour, baking powder, salt, swerve confectioners sugar, butter, large eggs, vanilla extract, almond extract, and whipping cream for the cake batter. Beat with a mixer on high until smooth.

3. Reserve ⅓ of the batter to the side. Then add the place the rest in an even layer in the bottom of a 9×9 baking dish that has been well greased.

4. Mix the ingredients for the cream cheese filling on high until smooth and creamy.

5. Add the raspberries over the cake batter in the baking pan.

6. Add a layer of the cream cheese filling to the top of the batter and raspberries. Sprinkle on the almonds and bake for 40 minutes and check to see if it’s done. Insert a toothpick in the center, and if it comes out clean, it’s done. Let the cheesecake cool, then refrigerate for 2 hours. Serve and enjoy!

  • 3 tsp. Baking powder
  • Pinch of salt
  • ½ C. Swerve confectioners sugar substitute
  • 8 Tbsp. Butter unsalted
  • 3 Large eggs
  • 1 tsp. Vanilla extract
  • ½ tsp. Almond extract
  • ½ C. Heavy whipping cream

For the cream cheese filling:

  • 8 oz. Cream cheese softened
  • ⅓ C. Swerve confectioners sugar substitute
  • 1 tsp. Vanilla extract
  • 1 Large egg
  • 1 C. Fresh raspberries

For the topping:

  • 2-3 Tbsp. Sliced almonds

Instructions
