Though it has to sit in the fridge to set, there are literally just 5 minutes of hands-on prep. This recipe makes 2 servings of chia seed pudding but you can easily double it for a crowd or halve it for just yourself…though it’s so good you may just want to eat a double serving yourself.

How To Make Keto Pumpkin Spice Chia Pudding:
Step 1: Combine the chia seeds and almond milk in a small bowl.
Step 2: Add sweetener, vanilla extract, and pumpkin spice. Mix thoroughly.
Step 3: Place in the fridge to set for at least 4 hours. You can leave it in overnight as well.
Step 4: Divide chia pudding into two separate servings. Top with pecans.

If you want to try keto chia seed pudding but don’t love pumpkin spice or want to try something different, you can change up the flavoring with this. The base recipe is almond milk, chia seeds, sweetener and vanilla extract. You could try making a chocolate or vanilla chia pudding or adding in other flavors.
How long can I store this chia seed pudding?
It takes at least 4 hours for this keto pumpkin spice chia seed pudding to set. You can definitely leave it overnight but I would recommend eating it within 24 hours.

- ● 1 c Unsweetened vanilla almond milk
- ● 4 tbsp Whole chia seeds
- ● 1 tsp Vanilla extract
- ● 1 tbsp Swerve confectioners sugar substitute
- ● 1 tbsp Pumpkin pie spice
- ● ½ c Chopped pecans
- In a bowl, combine the chia seeds and 1 cup of unsweetened vanilla almond milk.
- Add in 1 tbsp of Swerve sweetener, 1 tsp of vanilla extract and 1 tbsp of pumpkin pie spice. Whisk until completely combined, and place in the fridge to sit for 4 hours to overnight.
- Divide the chia seed pudding into two equal portions, and top each one with ¼ cup of chopped pecans.
