Keto Fried Chicken Tenders

Every kid – big or small – loves Fried Chicken Tenders. I mean, there’s a reason chicken fingers and fries are on literally every kids menu in existence!

I don’t necessarily make my kids follow a keto diet, they definitely get non-keto treats here and there, but for the most part we all eat keto for meals at home. For that reason, I’ve been experimenting with trying out some kid favorites keto-style.

Keto chicken fingers were the obvious place to start because let’s be real, it’s not just the kids that love them. They’re just a classic finger food that’s always a hit all-around.

The main culprit in traditional chicken tenders is the breading, which is usually made from flour and breadcrumbs. To make keto chicken tenders, I swapped out bread crumbs for crushed pork rinds. It may seem like an unusual ingredient but it creates the crunchy, crispy texture without the carbs and the flavor is very similar to the traditional breadcrumb mixture.

While my kids obviously love to eat these as they are, there are plenty of variations of what to do with keto chicken fingers. These yummy fried chicken treats can be added to a bed of lettuce and veggies to make a great lunchtime salad or can be paired with other low-carb veggies for a spectacular keto meal.  You can also serve them alone with dipping sauce as just an appetizer at parties or on game days. 

How To Make Keto Fried Chicken Tenders (Keto Chicken Fingers):

Step One:  Pat dry all the chicken tenders with some paper towels and set aside

Step Two:  Mix together almond flour, paprika, chili powder, cumin, garlic powder, salt and pepper on a plate, mixing to evenly distribute the herbs and spices throughout the almond flour.

Step Three:  In another bowl, beat one egg and then add heavy whipping cream. Combine well. 

Step Four:  Finely crush pork rinds, either using a food processor or by placing them in a Ziploc bag and crushing them with a rolling pin. Place one cup of crushed pork rinds on another plate.

Step Five: For crispy keto chicken tenders, coat each tender with the flour mixture, then dip into the cream and egg mixture before rolling them in the pork rind crumbs. Do this with each chicken tender.

Step Six:  Heat up several inches of coconut or avocado oil in a large skillet to 350 degrees. 

Step Seven: Place 3 chicken tenders into the oil at a time, being sure not to overcrowd the pan. Rotate the tenders halfway through and cook until they are brown and crispy, maintaining a temperature of 325-350 degrees to ensure they cook thoroughly.

Step Eight:  Serve with your favorite keto dipping sauces.  Bon Appetite!

Can I Use Other Cuts of Chicken for Keto Fried Chicken Tenders?

You can use all cuts of chicken to make keto chicken fingers.  The only thing that will vary with other cuts of chicken is the cooking time.  Ensure chicken with bones is cooked thoroughly to a temperature of 165 degrees Fahrenheit before serving.  

What types of Dipping Sauces Can I Serve With Keto Fried Chicken Tenders?

There are all kinds of low-carb dipping sauce recipes you can make for these fantastic keto chicken tenders.  There are many simple dipping sauces that can be prepared with a few simple items such as dijon mustard, reduced sugar ketchup, mayo, and sour cream.  Many manufacturers have also started making low-carb versions for these basic dipping sauces.  

Is There A Substitute for Almond Flour In Ths Keto Chicken Fingers Recipe?

Yes, you can replace the Almond Flour with Coconut Flour.  Both are very low-carb and main ingredients in Keto diets and can be substituted for wheat and refined white flour in most recipes.  

What Else Can I Do With These Keto Fried Chicken Tenders?

As mentioned above, there are so many things you can do with keto chicken fingers. You can add them to a salad or serve them up with veggies, put them in a wrap on a keto tortilla, and more. They also make great finger food for parties and get-togethers.

Ingredients

  • 16 Boneless skinless chicken tenderloins
  • 1 c. Almond flour
  • ½ tsp. Paprika
  • 1 tsp. Chili powder
  • 1 tsp. Cumin
  • 1 tsp. Garlic powder
  • Salt and pepper to taste
  • 1 Beaten egg
  • ½ c. Heavy whipping cream
  • 2 -3 oz. of Pork rinds crushed into fine crumbs
  • Coconut or avocado oil

Instructions

  1. Pat all of the chicken tenders dry with some paper towels.
  2. On one plate, place 1 cup of almond flour.
  3. To the almond flour, add in the paprika, chili powder, cumin, garlic powder, and salt and pepper to taste. Stir to distribute the herbs and spices throughout the almond flour.
  4. In a shallow bowl add ½ cup of heavy whipping cream to 1 beaten egg. Mix to combine them well.
  5. On a separate plate, place 1 cup of finely crushed pork rinds. You can use a food processor to crush the pork rinds into crumbs, or you can place them into a Ziploc bag, and use a rolling pin to crush them.
  6. Dip each chicken tender into the flour mixture on both sides.
  7. Continue by dipping the chicken tenders into the cream and egg mixture.
  8. Finally, roll the chicken tenders into the crushed pork rind crumbs.
  9. Heat up several inches of coconut or avocado oil in a large skillet. Use a thermometer to heat the oil to 350 degrees.
  10. Place the chicken tenders into the oil 3 pieces at a time. Rotate them with some tongs halfway through cooking, maintaining the oil temperature at 325-350 degrees. Cook the tenders until the chicken is cooked through and they are browned and crispy.
  11. Repeat step 10 until all of the chicken tenders have been cooked.
  12. Serve with your favorite dipping sauces.
