Keto Cheesy Chicken and Spinach Casserole

This Cheesy Chicken and Spinach Casserole may taste and look like a gluttonous meal but the truth is that between the chicken and spinach, this keto casserole is packed with protein and nutrients. The cheesy goodness is just a bonus!

One of the main elements of a keto diet is to burn fat and build muscle, something that can be controlled in the kitchen just as much as in the gym. So just like Popeye, when you eat your spinach your goals can be a reality in this delicious Keto Cheesy Chicken and Spinach Casserole.  The family will not even realize they are eating their veggies in this meal.  

Spinach and other dark leafy greens are an essential part of a keto diet because they are packed with nutrients and vitamins you may not normally get enough of. The benefits of spinach alone are huge. Spinach is packed with vitamins K and A, magnesium, iron, copper, vitamins B6 and B12, vitamin E, vitamin C, potassium, and calcium, just to name a few. In fact, one cup of spinach contains a large portion of the recommended daily value for each of those nutrients…and has only 41 calories!

Given the health benefits, I’ve been trying to incorporate more keto spinach recipes into our meal rotation. This Cheesy Chicken and Spinach Casserole were one of the first, 100% kid-approved as well.  It’s now one of my favorite ways to sneak vegetables to my family.

Two of my other favorite keto ingredients, chicken and cheese, are wrapped up in one recipe in this satisfying keto casserole. This hearty keto casserole will satisfy your hunger urges for hours, and it is easy to make to boot.

This cheesy keto casserole will be a “go-to” meal on the menu for your family because it is super delicious and super easy to make and since it’s packed with nutrients, no need to feel guilty serving it up again and again!  Your family will ask for this Keto Cheesy Chicken and Spinach Casserole over and over.     

How To Make Keto Cheesy Chicken and Spinach Casserole:

Step One:  Set your oven to 350 degrees

Step Two:  In a large skillet heat 1 tbsp olive oil over medium heat

Step Three:  Cook Spinach in the skillet (a little at a time) until it is wilted

Step Four:  Remove Spinach from Skillet and Drain it well.  Add the spinach to the bottom of a greased baking dish

Step Five:  Melt 2 tbsp of butter in the skillet you cooked your spinach in

Step Six:  Add the heavy whipping cream to your skillet and using a whisk add the Parmesan cheese, garlic powder, and basil

Step Seven: Add the Mozzarella cheese and salt and pepper to taste

Step Eight:  Add the Shredded Chicken to the cheese mixture

Step Nine:  Spread evenly, in the baking dish, the cheesy chicken mixture over the spinach mixture

Step Ten:  Sprinkle Mozzarella cheese over the mixture in the baking dish

Step Eleven:  Place the baking dish in the preheated oven for 20-25 minutes or until the cheese is browned and bubbly

Step Twelve:  Serve this Keto Cheesy Chicken and Spinach Casserole sprinkled with parsley

Can I Substitute Other Cuts of Chicken in This Keto Casserole?

Yes, you can substitute boneless, skinless chicken thighs in place of chicken breasts in this Keto Cheesy Chicken Casserole.  You can also use canned chicken that will make your prep time a lot less and still be very healthy and delicious. You can also prepare your shredded chicken ahead of time and portion and freeze it for up to 3 months in vacuum-sealed bags.  

Can I Use Frozen Spinach in Place Of Fresh Spinach?

You can use frozen spinach in this Cheesy Chicken and Spinach Casserole.  If you are using frozen spinach, thaw it ahead of time and squeeze excess moisture out of the blanched spinach and place it in the bottom of the baking dish.   

Can I Freeze Keto Cheesy Chicken and Spinach Casserole?

Yes, you can portion and freeze this keto casserole for up to a month.  This will make for quick delicious meals in a pinch. If you need lunch for your kids to take to school or a quick lunch to reheat in the microwave at work.  This is perfect.

Ingredients

  • 10 oz. Fresh spinach
  • 1 tbsp Olive oil
  • 2 tbsp Butter unsalted
  • 1 ½ c. Heavy whipping cream
  • ¾ c. Parmesan cheese
  • 1 tsp Garlic powder
  • 1 tsp Basil
  • 1 lb. Shredded chicken
  • ½ c. Mozzarella cheese + a bit more for topping
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 350 degrees.
  2. Heat 1 tbsp olive oil in a large skillet over medium heat.
  3. Add the spinach to the heated skillet a little at a time, and cook until wilted.
  4. Drain the spinach, and spread it on the bottom of a greased baking dish.
  5. In the same skillet, melt 2 tbsp of butter.
  6. Pour in the heavy whipping cream.
  7. Whisk in the Parmesan cheese, garlic powder and basil.
  8. Stir in the mozzarella cheese.
  9. Add salt and pepper to taste.
  10. Mix in the shredded chicken.
  11. Spread the chicken mixture evenly over the spinach in the baking dish.
  12. Top with a thin layer of Mozzarella cheese.
  13. Bake for 20-25 minutes until the cheese is browned and bubbly.
  14. Garnish with freshly chopped parsley and serve.
